Carrot Salad


  • 2 large carrots
  • ¼ cup raisins
  • 3 tablespoons sour cream or plain Greek yogurt
  • 2-3 teaspoons sugar or sugar substitute


  • Place raisins in a small amount of water, so
  • they plump up a little. (This step is optional)
  • Grate carrots.
  • Combine grated carrots, sour cream or yogurt,
  • raisins (take them out of the water prior) and
  • then add sugar (adjust to your taste).
  • Serve as a snack or side.
