- 2 large carrots
- ¼ cup raisins
- 3 tablespoons sour cream or plain Greek yogurt
- 2-3 teaspoons sugar or sugar substitute
- Place raisins in a small amount of water, so
- they plump up a little. (This step is optional)
- Grate carrots.
- Combine grated carrots, sour cream or yogurt,
- raisins (take them out of the water prior) and
- then add sugar (adjust to your taste).
- Serve as a snack or side.
