Ingredients
- 16 oz jar of tomatillo salsa/salsa verde
- ½ can of chipotle peppers in adobo sauce (optional)
- 2 lbs. boneless skinless chicken breasts or thighs
- 1 small white onion, chopped
- 1 jalapeno, diced
- 1 poblano pepper, diced
- 2 garlic cloves, minced
- Limes (for serving)
- Cilantro (for serving)
Instructions
- Place the chicken with the jar of tomatillo salsa, half the can of chipotle adobo peppers, poblano and jalapeno peppers, onion, garlic, salt and pepper in the crockpot. Stir the ingredients together.
- Cook on low for 6 to 8 hours or high for four hours until chicken is cooked through.
- Remove from crock pot and shred the chicken.
- Serve on rice with beans or in a tortilla for tacos and garnish with wedges of lime and chopped cilantro.
